This summer favorite is easy to prepare and takes less than an hour start-to-finish. Serve it with rice, corn on the cob or salad for a light warm-weather meal. Does this Spark an idea?

Things You'll Need

  • 1.5 c. ketchup
  • 1 c. mustard
  • ½ c. cider vinegar
  • ½ c. sugar
  • 1 tbsp. Worcestershire sauce
  • ½ tsp. maple extract
  • ½ tsp. coarsely ground black pepper
  • 2 tbsp. butter
  • 1.5 lbs skinless, boneless chicken breasts, cut into cubes
  • 2 small yellow summer squash, cut crosswise into 1/2 inch cubes
  • 12 medium mushroom caps
  • 1 large green pepper, cut into 1/2 inch pieces

Instructions

      Mix all ingredients except chicken and vegetables in a medium saucepan. Cook over medium heat 3 to 4 minutes or until the sauce is hot and butter is melted.

      Assemble chicken cubes and vegetables on skewers and coat them well with the sauce.

      Grill the skewers over medium heat for 10 to 15 minutes or until the chicken is no longer pink. Occasionally turn the skewers and brush on more sauce as needed.

      Heat the remaining sauce and serve on the side with the kabobs.

  • Serve on a solid colored dish to bring out the colors in this meal.
