How to make Southern Style Mustard BBQ Chicken

What could be a better mix then mustard, BBQ, and chicken? This is sure to be a summer favorite.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1½ cups catsup
  • 1 cup mustard
  • ½ cup cider vinegar
  • ½ cup Sugar
  • 1 Tbl worcestershire sauce
  • ½ tsp maple extract
  • ½ tsp coarsely ground black pepper
  • 2 Tbl stick butter or margarine
  • 1½ lbs skinless, boneless chicken breasts, cut into cubes
  • 2 smal yellow summer squash, cut crosswise into 1\2 cubes
  • 12 medium mushroom caps
  • 1 large green pepper, cut into 1\2 pieces

Step1
Mix all ingredients, except chicken and vegetables, in medium saucepan. Cook over medium heat 3 to 4 minutes or until sauce is hot and butter is melted.
Step2
Assemble chicken cubes and vegetables on skewers. Grill over medium heat 10 to 15 minutes or until chicken is no longer pink. Turn occasionally and cook generously with sauce.
Step3
Heat remaining sauce and serve with kabobs. You can also stack your gril and start corn on the cob or other vegetables ahead of time to round off this meal.

Tips & Warnings

  • Serve on a solid colored dish and it will bring out the colors in this meal.
  • Never leave the grill unattended.
