How to make Caribbean Fillet of Fish

Fish on the grill what could be a better combination for the coming summer?

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 3 pounds white fish fillets, about 3/4 inch thick
  • 4 shallots, peeled and finely chopped
  • 4 cloves garlic, minced
  • 1 cup orange juice
  • 1 cup white wine
  • 1/4 cup dark rum
  • juice of 2 limes
  • 2 tablespoons fresh chopped rosemary
  • 1/4 cup soy sauce
  • 1/4 cup chopped parsley
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon salt

Step1
Remove skin from fish fillets. Make sure all bones have been removed. Rinse and pat dry with paper towels.
Step2
Combine other ingredients (everything but the fish) in a large saucepan. Bring to a boil and reduce heat to a simmer. Reduce by half.
Step3
Preheat grill. Grill fish about 3-4 minutes per side cooking though . Remove from grill and pour equal amounts of the sauce over each fillet. Serve on a colorful serving dish and this makes a great meal.

Tips & Warnings

  • Always check the freshness of the fish before buying at the grocery store.
  • Never leave a lit grill unattended.
