Things You'll Need:
- Corn or Flour Tortillas
- Black Beans, canned
- Onions- red is best
- Yams, aka Sweet Potatoes
- Cilantro
- Cumin
- Grated cheese, 2% milkfat
- Salsa of your preference
- EXTRAS- what you like, sprinkle on top - tomatoes, black olives,green or red peppers, diced avocado, corn

Step 1
Wash, peel and dice the yams, microwave them until soft, about 2 1/2-3 min's for 2 small yams or 1 large yam--varies with microwave strength.
Dice all the ingredients & extras you want to use (onions, cilantro, tomatoes, peppers, etc) -
Step 2
Get all your ingredients together, and add the following (for each burrito) onto the tortilla: 1/4 c. black beans, 1/4 c. cooked diced yams, 1 TBS. each of cilantro & onions, a sprinkle of cumin powder, 1-3 TBS. salsa to taste, and 1/8 cup of 2% cheese. Add any of the extras you choose- in amounts that vary to your taste- probably 1/2-1 1/2 TBS. will be fine. If you add too many ingredients you may not be able to close the burrito, in which case, you will be making a soft-shell tostada.

Step 3
Fold the tortilla ends in and into a roll - with the ends at the bottom. Microwave for about 1 1/2 minutes, until cheese is melted. Now put a small sprinkle of cumin on top, a TBS of salsa and a sprig of cilantro. Eat and enjoy!
