How to make Christmas Potato Candy

This is a wonderfully sweet candy and a old southern tradition.

Instructions

Things You'll Need:

• 2 tbl. of Mashed Potatos
• 1lb. Confectionary Surgar
• Chunky Butter
• Peanut Butter
• Wax Paper

1. This is so easy and requires no cooking if you use left over mashed potatoes from dinner. Your children will love making this. We add a splash of green and red food coloring to make it look festive.

2. 1. Mix mashed potato and confectionary. sugar in a bowl until if forms a soft ball.
   2. Put the dough on a sheet of wax paper and roll it flat with your rolling pin.

3. 3. Spread chunky peanut butter over the whole top
   4. Use the wax paper to help you roll the candy up in a long tube.
   5. refrigerate for about 2 hours and cut into 1/2" sections.

Tips & Warnings

• We like to add coconut, banana, and maple flavor but you can make this to meet your taste.
• This candy is very sweet

on 8/2/2008 Thanks for this recipe.I've been trying to find it for 40 yrs. My mother died when I was 10 and I remember how goo her potato candy was, but never could find anyone else who ever heard of it. Can't wait to fix it.TERRIEMAE
