How to make "Bam Chicken"

Aubrey's Bam chicken happened the 1st time when by daughter Aubrey was a little girl. I wanted something different for dinner and these were the ingredients I had available, so I threw them together, and it was an instant hit at the Scarborough home. Aubrey exclaimed, "Hey Dad, this is like food that Bam Guy makes!" And so it was named. Bam Chicken.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Ingredients: 4 Boneless Chicken Breasts 1-1/2 cups Italian Bread crumbs 1 box shredded spinach 1 cup cheddar cheese 1/2 teaspoon salt 1/2 teaspoon cayenne pepper 1 egg

Step1
Preheat oven to 350F
Mix bread crumbs, salt & cayenne pepper
together then divide evenly into 2 mixing bowls.
Drain spinach well. Grate or cube cheese
into no bigger than 1/4 inch cubes. Add
egg, cheese & spinach to 1st bowl & mix
well; this will be the stuffing.
Step2
Slit a pocket
into chicken breast and fill with stuffing.
Roll each breast into 2nd bowl of bread crumbs.
When all 4 breasts are assembled, pan fry
on med -high about 4 minutes on each
side until golden.
Step3
bam chicken Pop them uncovered in
the oven at 350F for 30 minutes or until
internal temp is 180F. Enjoy!!!

Tips & Warnings

  • use leftover bread crumbs on sliced green tomatoes or Zucchini or yellow squash and cook them by coating in egg then bread crumbs and fry them in the pan along with the chicken cracklings (leftover from frying the chicken) for an added treat!
  • you might want to have a huge green salad with this meal.
