Difficulty: Moderately Easy
Things You’ll Need:
- 2-10 ounce pkgs frozen broccoli spears or 2-8 oz pkgs cut asparagus (I use fresh broccoli)
- 1/4 cup butter
- 1/3 cup flour
- 1/8 tsp grouund nutmeg
- 1 cup light cream or milk
- 1 cup chicken broth
- 1/4 cup dry white wine
- 1/3 cup shredded swiss cheese
- 10 ounces sliced cooked chicken (I usually boil chicken brests and cut up)
- 1/4 cup grated Parmesan Cheese
- Paprika
Step1
Cook broccoli according to package directions. drain. Arrange crosswise in a 13x9 inch baking dish.
Step2
In a saucepan melt butter,stir in flour and nutmeg, 1/2 tsp salt and 1/8 tsp pepper. Add cream or milk and broth all at once. Cook over medium heat and stir until bubbling continue cooking 1-2 minutes more. Stir in wine. Add swiss cheese stirring until cheese melts.
Step3
Pour half of the sauce over broccoli. Top with chicken. Pour remaining sauce over chicken. Sprinkle with Parmesan cheese and paprika. Bake in a 350 degree oven for 20 minutes until heated through. Broil 3-4 inches from heat 1-2 minutes until golden brown.
