These easy to make cupcakes featuring the traditional marshmallow peep candy are perfect for Easter. Use for dessert, table decorations or in Easter baskets. Let kids do the decorating for a great Easter project.

Instructions

Things You'll Need:

  • Cake mix, any flavor
  • cupcake liners
  • ready made frosting, white
  • dry coconut flakes, not frozen
  • peep chicks, all colors
  • green food coloring
  • small jelly beans
  1. Step 1

    Make cupcakes according to package directions using cupcake liners. Allow to cool completely then frost. You can add a few drops of food coloring to frosting for a green tint if you want.

  2. Step 2

    Add one peep to the center of each cupcake, then place clusters of 2-3 jelly beans around the base of the peep so they stick in the frosting.

  3. Step 3

    Place about 1 cup of coconut flakes in a bowl and add drops of green food coloring and mix well. Start with one drop of coloring and add more until desired shade is acheived.

  4. Step 4

    Dust the coconut "grass" around the base of the peep and shake off the excess.
