How to Make a Pinto Bean Pie

You may crinkle your nose when you hear the name, but if you like pecan pies then you will love this one.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 3 c sugar
  • 4 eggs
  • 1 can 15 oz pinto beans
  • 1 small can or pouch coconut
  • 1 c chopped pecans
  • 2 sticks margarine (melted)
  • 2 tsp vanilla
  • 2 pie shells
Step1
Preheat over to 300 degrees.

Open a can of pinto beans and pour into a small bowl. With a fork mash beans into a paste.
Step2
In a large bowl mix all the ingredients including the mashed beans. Pour into pie shells
Step3
Bake at 300 degrees for 1 hour.

Tips & Warnings

  • Do not use graham cracker pie shells.
