Things You'll Need:
- 3 cups water
- 2 and 1/2 tsp. salt
- 2 cloves garlic
- 4 serrano chiles
- 1 pound tomatillos (Mexican green tomatoes), husks removed
- 1/2 cup loosely packed fresh cilantro
- 1/4 cup finely chopped onion
- a blender

Step 1
Remove the husks from the tomatillos and wash them.

Put the tomatillos, garlic and chiles in a saucepan with three cups of water. Add 1 tsp. salt

Step 3
Bring the water to a boil, reduce heat, and simmer for 8 minutes.

Step 4
Drain, reserving 1/2 cup of the liquid.

Step 5
Transfer the garlic, chiles, tomatillos and reserved liquid to a blender.

Step 6
Add the cilantro and remaining salt and CAREFULLY puree the mixture.

Step 7
Stir iin the chopped onion and let the sauce cool before serving.

on 3/17/2008 I have not tried it with lime juice, but that makes sense, and would brighten the taste. Mexicans squeeze limes on almost everything, and it is always good!

on 3/15/2008 I love real Mexican food! It's hard to find where I live now. This looks like a great recipe with most all the right ingredients! Have you tried adding a bit of lime juice to this? I do make my own but will have to try this version! I will have to share my version sometime soon too!
