We all know that spinach is good for us, but most of us like only when it is loaded with lots of fattening ingredients as a dip. The good news is that you can still enjoy a great creamy spinach dip but with a lot less fat.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 bunch of fresh spinach (you can buy bagged spinach in the produce isle or frozen is fine also)
  • 2 artichokes (boiled, you can also use canned if desired, 1 can drained)
  • 2 cups low fat Monterey jack cheese, grated
  • 1/4 cup Parmesan cheese, grated
  • 8 ounce carton of low fat sour cream
  • 3 garlic cloves minced
  • 1 8 oz block of low fat cream cheese
  • 1 small onion diced
  • 1/4 red bell pepper diced
  • 1 tbsp olive oil
  1. Step 1
     

    This recipe is delicious and pretty easy to make. I absolutely love a good spinach dip, but when I make mine at home AI can't help but throw in artichoke hearts. So I hope that you enjoy this recipe as much as I do! I prefer to use fresh ingredients whenever possible, but if you have canned or frozen spinach and artichokes then that is fine as well.

  2. Step 2
     

    In a sauce pan heat the olive oil and then add in the onion and when it is transparent add in the bell pepper and garlic, saute about 2 more minutes. Next add in the cream cheese and sour cream, stir well, then add the cheeses and stir well again. Add in the spinach and artichokes and continue to cook for about 2 minutes.
    Remove from heat and let it sit for a few minutes.

  3. Step 3
     

    Serve warm with low fat tortilla chips or crackers. I also love it with fresh vegetables cut up. You can serve it with anything that you would like to, it is a delicious appetizer and is sure to go fast at any get together or just you and your family.

  4. Step 4
     

    It is hard to make this dip without using cheese, but do not be discouraged by using cheese. As long as you use low fat or reduced fat products it is less fattening then the original version. You can splurge from time to time anyways. Doing so will help you maintain a new low fat lifestyle.

  5. Step 5
     

    If you give into a craving that you have from time to time it allows you to get a taste for what you really love and then you go back to your low fat lifestyle. If you deprive yourself of all your favorite foods then you most likely will not stick to a low fat diet. Eventually you will binge on a lot of fattening foods and then continue to do so.

    This recipe is low fat since most of the products you are using are low fat and I hope that you enjoy it!
