Mix the sugar, water, corn syrup, peppermint oil and salt in a large heavy pan. Add the peppermint oil to taste at this stage only. You can experiment with other flavors as well. Many breath mints include fruit flavors that compliment the mint flavor, but be sure to only use concentrated flavors such as peppermint oil, or the mints will not set up.

Heat the pan on medium and stir until all the sugar crystals have dissolved. At this point, stop stirring.
Step3
Bring to a rolling boil and wash the crystals down from the sides of the pan.
Step4
Add the cream of tartar and maintain the rolling boil until it reaches the hard crack stage on the candy thermometer.
Step5
At this point, form your mints however you want. You can get molds or just pour a sheet and break it into mints after cooling.
Step6
Store in a small tin lined with wax paper in a non-humid environment.
