How to Make Low Carb Crock Pot Fajitas

Who doesn't love Fajitas? Serve these with all your favorite toppings: Shredded cheddar or Monterey Jack cheese, regular, low fat or fat-free sour cream, homemade guacamole, and of course, fresh sliced limes, sliced green onions, home made salsa and extra chopped cilantro! Add some creamy refried beans on the side and a great margarita, Mexican beer (I love Corona) or some fruity punch to wash it all down!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 1/2 -2 lbs flank steak or round steak
  • 1/2- 1 t salt
  • 1 large bell pepper chopped
  • 1 large sweet onion
  • chopped
  • 1 can chopped green chilies
  • 2 jalapeños chopped (remove seeds for less heat and wear gloves if you have sensitive skin)
  • 2 teaspoons chili powder (Mexican chili powder preferred)
  • 1 t ground cumin
  • 1 t ground coriander
  • 1 14 oz can Rotel or chopped tomatoes in juice
  • ½ cup or more chopped fresh cilantro (optional)
  • Juice of 1 Lime
  • Flour tortillas (whole wheat is preferred)
  • condiments as suggested

Step1
Cut roast into several pieces and place in crock-pot. Add onion, peppers, seasoning and tomatoes. Cover and cook on high heat 8- 10 hours. Alternately you can cook in a large covered pot on the stove top. Bring to boil, lower heat to simmer and cook about 1 ½ -2 hours or until the meat falls apart easily.) Do not add cilantro until just before serving.
Step2
Remove meat from crock-pot and allow to cool in a large bowl. When cool enough to handle, shred meat with forks or simply pull apart with clean hands. Carefully pour remaining sauce and tidbits from crock-pot over meat. Stir and check for seasonings. Stir in lime juice and optional cilantro.
Step3

Wrap several tortillas in clean dishtowel and warm in microwave for 15 seconds to one minute, depending on microwave and number of tortillas.

Tips & Warnings

  • Serve with refried beans, salsa and fruit punch for the kids or the perfect margarita or your favorite Mexican beer for the adults!
  • I happen to love cilantro, however some people just do not care for it at all, so using it or not is up to you.

on 3/17/2008 Mmmmmm...I'm vegetarian and so I am going to try these with tofu as a substitute for the meat. This will be on next Saturday night's menu.
