Apple pie is considered America's favorite dessert. This recipe combines our love for apples and the overabundance of zucchini that generally mocks us all come summertime.

Instructions

Things You'll Need:

  • 4 cups of zucchini
  • 2 cups apple
  • 1 cup sugar
  • ½ cup brown sugar
  • 1 ½ tspns cinnamon
  • 1 ½ tspns cream of tartar
  • 2 tablespoons flour
  • ½ tsp salt
  • 1 tsp vinegar
  • 2 tablespoons Butter - cut into pats

  1. Step 1

    Preheat the oven to 350 degrees.

    Peel the zucchini and cut them lengthwise. Remove the seeds and cut it in slices about 1/4 inch thick. Cook slices in boiling water until they are barely tender, about 2 minutes. Remove it from the stove. Drain well and cool completely.

    Peel and core the apples. Slice them about 1/4 inch thick.

  4. Step 4

    In a bowl, toss the cooled zucchini and apples with sugars, cinnamon, cream of tartar, flour and salt until all are well coated.

  5. Step 5

    Place the pastry in a 9 inch, greased pie pan. Fill with zucchini/apple mix. Dot with butter, drizzle with vinegar. If desired, use a second pie crust to top. Make small slices in the center of the top to let steam escape.

  6. Step 6

    Bake at 350 degrees for about 75 minutes or until the apples are tender.

Tips & Warnings
  • Top with streusel topping (made with butter, oatmeal, brown sugar and a dash of cinnamon).
