Fresh lettuce from the garden deserves a vinaigrette salad dressing made from scratch. This is a tangy, delicious homemade vinaigrette salad dressing that is also low in fat. Once you've become accustomed to fresh salad dressings made at home, you'll never want to buy one from the store again.

Difficulty: Easy
Instructions

Things You'll Need:

  • Salad dressing container
  • Whisk
  • Measuring spoons
  • Medium-size bowl
  • 3 Tablespoons frozen apple juice concentrate, thawed (your favorite brand is fine)
  • 1 Tablespoon mustard (whole-grain tastes great, but any brand is fine)
  • 1 Tablespoon freshly squeezed lemon juice
  • 1 Tablespoon dry sherry or cooking white wine
  • 1 Tablespoon shallots, minced
  • 1 Tablespoon canola oil or walnut oil
  • 2 Tablespoons Dijon mustard
  • Freshly ground black pepper to taste
  1. Step 1

Gather together your kitchen utensils. You'll need a medium bowl, whisk, measuring spoons, and a salad dressing container. A salad dressing cruet or a small canning jar with a lid will work fine.

  2. Step 2

Next, gather all of your ingredients.

  3. Step 3

In the bowl, whisk together the frozen apple juice concentrate, mustard, lemon juice, dry sherry or cooking wine, shallots, canola or walnut oil, and Dijon mustard. Whisk until the ingredients are blended well.

  4. Step 4

At the very end, add the freshly ground black pepper. Whisk the pepper into the dressing.

  5. Step 5

Pour your homemade, low-fat vinaigrette salad dressing into your container of choice with a tight-fitting lid and place into the refrigerator.

Tips & Warnings
  • If you prefer not to use cooking sherry or cooking white wine in any of your recipes due to the trace alcohol amounts they contain, use low-fat, defatted, chicken broth instead.
  • Enjoy this salad dressing on everything from salads, meats, and veggies.
