How to make Weight Watcher, Low-Fat Tuna Melts

Are you tired of boring nights of eating chicken breast and steamed veggies? Weight Watchers is an excellent way to lose weight, but sometimes meals can get monotonous. Here's a very quick and easy recipe the whole family will love!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 4 whole (8 halves) Thomas brand LIGHT english muffins
  • 2 cans solid white albacore tuna packed in water, drained
  • 1 stock of celery, finely chopped
  • 2T mayonaise made with canola oil, 1T fat free mayonnaise
  • 1 cup light cheese, cheddar or mozerella
  • small mixing bowl
  • toaster
  • oven with broiler
  • cookie sheet lined with foil
  1. Step 1

    Preheat the broiler on your oven.

    Then, split the english muffins in half and toast in a toaster set on a light to medium setting. Lay each side middle side up on the cookie sheet.

  2. Step 2

    In the mixing bowl, mix up the chopped celery, two cans of tuna, and the mayonnaise. Mix and put a scoop on each of the english muffins. Spread out so it is in an even layer.

  3. Step 3

    Put 1/8 cup of cheese on top of each melt. Put under the broiler until cheese is melted. Voila! Low fat and yummy tuna melts.

Tips & Warnings
  • If you use this recipe, each melt should have around 3 points each.
  • Try using other mix-ins in the tuna! Dill pickle relish, roasted red pepper, and green onions are all good substitutes for the celery and to boost the fiber content, try adding some beans to the tuna.
  • This recipe is also delicious with crab meat or imitation crab meat too!
  • To lower your point value, use only fat free cheese and mayonnaise. That brings the points value down to about 1.5-2 points per melt.
  • Don't put the melts under the broiler and walk away. Keep a very close eye on them or they'll melt in a hurry.
  • Make sure to add in points for any substitutions you make. If you use full-fat mayonnaise, or full-fat cheese, make sure to add in those points.
