How to Make Irish Colcannon

St. Patrick's Day is the perfect time of the year to try out some traditional Irish recipes. Colcannon is a very traditional Irish dish. Colcannon makes an excellent side dish and is fairly easy to make.

Difficulty: Easy

Things You’ll Need:

• Head of Cabbage
• 2 lbs White Potatoes
• Onion Large
• 1 cup of Milk
• 1 1/2 Sticks of Butter
• 1/2 Tsp of Parsley
• Pinch of Pepper
• Pinch of Salt

1. Boil the cabbage until it is tender. At the same time boil the potatoes whole until they are tender.
2. Chop onions and sauté onions in a little bit of butter.
3. Shred and chop cooked cabbage.
4. Mash potatoes with milk and butter until smooth.
5. Fold in onions and cabbage.
6. Season with pepper, salt and parsley.

Tips & Warnings

• Add crumbled bacon for an extra flavor
• Add cooked ham for a heartier dish.
