How to Brew Kung Fu Tea

Kung Fu is a style of brewing oolong tea that uses lots of leaves and a short infusion time. The style originated in southern China and emigrated with Chinese immigrants. Brewing Kung Fu tea is a social activity to promote friendship and greet guests.

Instructions
  1. Step 1

    Use teapots fired from porous clay. The tea set used to brew Kung Fu tea is small and delicate, usually with a teapot and three teacups.

  2. Step 2

    Use a sniff cup, which is a porcelain cylinder three by one inches. Fill the sniff cup and put it into a tasting bowl. Oolong tea's aroma is as important as the taste. Smell the sniff cup each time the tea is infused.

  3. Step 3

    Add tea to the teapot. The amount you'll use will differ slightly with each oolong tea.

  4. Step 4

    Fill teapot with hot water until it overflows a little. Let the water warm up the teapot for a few minutes. Use the water in teapot to wash the teacups out and rinse it out. Put the teapot in a hot water bath.

  5. Step 5

    Pour Kung Fu tea from on high using a non-stop circular motion. The amount and color in the teacups should be the same. Cover the teapot to keep it warm.

Tips & Warnings
  • Keeping the water hot is important.
  • Tea leaves are better at the second pouring. Use the first pouring of tea to rinse the cups.
  • Use spring or well water to brew the tea.
  • Only use oolong tea for the Kung Fu tea ceremony. Dried in the sun after picking, oolong is quickly cooked and fermented to produce crisp, dry leaves.
