Explain the rules simply in language that's appropriate to the child's age. Words like "offsides" or "high-sticking" can be confusing to younger hockey fans that don't understand some of the game's complex rules yet. Once they understand how the game is played, you can use official terminology with them.

Explain the basics of the game and let them decide for themselves what teams and players they like and dislike. As a seasoned hockey fan, you're entitled to think that a particular team is better than another or that one player takes cheap shots and plays dirty, but your kids deserve to form their own opinions.
