Buckwheat pancakes are a healthy and tasty treat for breakfast. Many individuals use buckwheat pancakes as a way to cub appetite in the morning to lose weight. You can make extra dry mix and use as desired. Recipe follows.

Instructions

Things You'll Need:

  • __MIXTURE INGREDIENTS:__
  • 2 cups buckwheat flour
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • ___PREP INGREDIENTS:___
  • 1 cup milk
  • 2 tablespoons butter, Melted
  • 1 egg, lightly beaten
  1. Step 1

    Combine all dry ingredients in medium bowl until well blended. (Store unneeded mixture in airtight container at room temperature up to 2 months.)

  2. Step 2

    Place 1 cups of pancake mix in medium bowl; make well in center. Whisk together milk, butter and egg in small bowl. One cup makes 2 pancakes, equal to one serving suggestion.

  3. Step 3

    Pour into well. Stir mixture just until blended. (Batter will have small lumps. Lightly grease griddle or skillet with additional butter or non-stick cooking spray. Heat griddle until hot.

  4. Step 4

    Drop batter by 1/4 cupfuls onto hot griddle. Cook 3 to 4 minutes or until bubbles appear and break on the surface of pancakes. Turn pancakes. Cook 3 to 4 minutes or until bottoms are browned. Serve immediately.

Tips & Warnings
  • You may add a small amount of blueberries if desired.

on 5/31/2008 Excellent! Switch the sugar for agave nectar or any other unprocessed natural sweetener to make them even healthier. I will make these for sure, thanks. (with blueberries!)
