Things You'll Need:
- __MIXTURE INGREDIENTS:__
- 2 cups buckwheat flour
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 4 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- ___PREP INGREDIENTS:___
- 1 cup milk
- 2 tablespoons butter, Melted
- 1 egg, lightly beaten

Step 1
Combine all dry ingredients in medium bowl until well blended. (Store unneeded mixture in airtight container at room temperature up to 2 months.)

Place 1 cups of pancake mix in medium bowl; make well in center. Whisk together milk, butter and egg in small bowl. One cup makes 2 pancakes, equal to one serving suggestion.

Pour into well. Stir mixture just until blended. (Batter will have small lumps. Lightly grease griddle or skillet with additional butter or non-stick cooking spray. Heat griddle until hot.

Drop batter by 1/4 cupfuls onto hot griddle. Cook 3 to 4 minutes or until bubbles appear and break on the surface of pancakes. Turn pancakes. Cook 3 to 4 minutes or until bottoms are browned. Serve immediately.
