Step1
Begin forming a bond with customers as soon as they enter your serving station or sit at your table. Greet them warmly and make them feel welcome.

Kneel or squat down next to the table when taking the order. Getting down on the customers' level gives the impression that you're genuinely interested in them and creates an atmosphere of friendly conversation.
Step3
Repeat back what each customer has ordered. Researchers say this mirroring is the best way to get a customer to feel you have heard, understood and are confirming her selection. It also helps to make a positive comment about the selection because it makes him feel he has chosen well.
Step4
Return to the table periodically during the meal to joke with and check in with your customer. Once or twice is usually enough. There's a fine line between being attentive and intruding on table conversation and enjoyment of the meal.

Up sell whenever possible. For example, if a customer orders coffee at the end of a meal, you might suggest, "We make a great Irish Coffee. It's my favorite. Would you like to try it?" This not only helps the customer add a pleasant finish to the meal, it also increases the total bill your tip is based on.
