Things You'll Need:
- Spaghetti
- Olive Oil
- Soy crumbles
- Green pepper(or yellow or red or all three!)
- Fresh garlic cloves
- Fresh onions
- Carrots, peas, corn or any other vegetable you want to add
- Diced tomatoes
- quantities are determined by how hungry you are, or how many you are trying to feed.
-
Step 1
Prepare your pot, and determine the amount of spaghetti you want to cook. Add virgin olive oil to water to keep noodles from sticking together. Once water is boiling, add spaghetti to water. Depending on the type of spaghetti you use, the noodles will be done in anywhere from 5 to 15 minutes.
-
Step 2
Take all vegetables you have decided to use from the list (and your imagination) and dice into small portions. Place onions and garlic into large frying pan with a small amount of olive oil to saute. Once these are soft, place remaining vegetables into the pan to just tender stage, (no more than five minutes). Add the soy crumbles to this mixture and savor the aroma.
-
Step 3
In a separate pan, warm your spaghetti sauce, (you can use any of your favorites, just make sure that meat is NOT in its ingredients), or you can make your own with the following ingredients:
1/4 cup extra-virgin olive oil,1 large onion, peeled, coarsely chopped (2 cups, 3 garlic cloves, peeled, finely chopped,5 large tomatoes, coarsely chopped (4 cups) or 2 (28-ounce) cans whole tomatoes, drained, coarsely chopped,2 tablespoons tomato paste, salt and pepper to taste.
I for one use the store brand of meatless sauce, saves time and money. -
Step 4
Make your toast, any kind is fine, or you can make your own with bread in toaster, and add garlic butter. If you chilled wine, now is the time to break it out.
-
Step 5
Once all are done (spaghetti, veggies, and sauce) combine veggies and sauce. Drain spaghetti and prepare for the best spaghetti dinner you ever had!
