Things You'll Need:
- Boneless, skinless chicken breasts or thighs or pork chops
- Jar of Salsa (your favorite - Ortega's Homestyle is GREAT)
- Chopped zucchini
- Corn: canned or frozen
- Fresh cilantro (if desired)

Step 1
Brown boneless, skinless chicken breasts or thighs (breasts are lower in fat, thighs are higher in flavor) or pork chops in a bit of oil in a large skillet.

Step 2
Pour over a jar of salsa. Shake a little water in the empty jar and add that to the skillet.

Step 3
Add chopped zucchini or corn (or both!). Cover skillet and turn heat down to low.

Step 4
Cook for 15-20 minutes. Cut meat to make sure it’s done.

Step 5
Sprinkle with cilantro and serve with rice, if desired.
