How to Make Quick Salsa Skillet Dinner

This is super simple and very tasty! Use any type of salsa you like.

Instructions

Things You'll Need:

  • Boneless, skinless chicken breasts or thighs or pork chops
  • Jar of Salsa (your favorite - Ortega's Homestyle is GREAT)
  • Chopped zucchini
  • Corn: canned or frozen
  • Fresh cilantro (if desired)
  1. Step 1

    Brown boneless, skinless chicken breasts or thighs (breasts are lower in fat, thighs are higher in flavor) or pork chops in a bit of oil in a large skillet.

  2. Step 2

    Pour over a jar of salsa. Shake a little water in the empty jar and add that to the skillet.

  3. Step 3

    Add chopped zucchini or corn (or both!). Cover skillet and turn heat down to low.

  4. Step 4

    Cook for 15-20 minutes. Cut meat to make sure it’s done.

  5. Step 5

    Sprinkle with cilantro and serve with rice, if desired.
