How to Make Healthy Homefries

Home-fried potatoes are delicious, but all too often soaked in butter or oil. The following is a tasty, low fat version of homefries that won’t break the caloric bank. A small amount of water is used to keep the homefries moist without dousing them with fat.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 medium potato per desired serving
  • 1-2 cloves garlic per desired serving
  • 2-3 slices of onion per desired serving
  • non-stick skillet with cover
  • 1 tbsp extra virgin olive oil
  • Water
  1. Step 1

    Cut each potato in half lengthwise and thinly slice each half so you get a series of half-moon slices.

  2. Step 2

    Mince the garlic and finely chop the onion.

  3. Step 3

    Heat a non-stick skillet over medium heat. Add the olive oil and allow to heat for 10 to 15 seconds.

  4. Step 4

    Add the onions and garlic. Sauté over medium heat for a minute or two, until the onions become slightly translucent.

  5. Step 5

    Reduce heat to low and add the potatoes. Add a splash of water (only 1 or 2 tablespoons) and cover.

  6. Step 6

    Uncover and stir the potatoes once every five to ten minutes, adding an additional tablespoon of water if the potatoes begin to stick.

  7. Step 7

    When a fork easily pierces the potatoes, they are done. If you prefer crispy potatoes, remove the cover and continue cooking on high heat for several minutes, until the homefries are suitably browned.

Tips & Warnings
  • One quarter cup of diced peppers (green, red, orange or yellow) can also be added to this dish, if desired. These should be sautéed with the onions and garlic in step 4.
