Wheat free cupcakes are easy to make and satisfy anyone's sweet tooth! Here is a simple recipe for delicious cupcakes.

Instructions

Things You'll Need:

  • 1/2 cup soymilk (flavored if you like)
  • 1 1/4 cups oat flour (found in most stores)
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 tbsp. unrefined sugar
  • Cupcake pan
  • Paper liners
  • 3/4 tsp. vanilla extract
  • 3/4 tsp. almond extract
  • 1/8 cup vegan vegetable shortening (found at health food stores)
  1. Step 1

    Combine all dry ingredients in a bowl.

  2. Step 2

    Combine all wet ingredients, then mix well into the dry ingredients.

  3. Step 3

    Once mixed, put paper liners in a cupcake pan and fill each liner with 3 oz. batter (an ice cream scoop works well).

  4. Step 4

    Bake at 350 degrees F for 15 to 20 minutes. Make any flavor butter cream icing and top cupcakes once cooled.

Tips & Warnings
  • Turn cupcakes about half way through for even baking.
  • Watch closely; every oven is different and you don't want the cupcakes to get too crispy.
