Things You'll Need:
- 1/2 cup soymilk (flavored if you like)
- 1 1/4 cups oat flour (found in most stores)
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 tbsp. unrefined sugar
- Cupcake pan
- Paper liners
- 3/4 tsp. vanilla extract
- 3/4 tsp. almond extract
- 1/8 cup vegan vegetable shortening (found at health food stores)

Step 1
Combine all dry ingredients in a bowl.

Combine all wet ingredients, then mix well into the dry ingredients.

Once mixed, put paper liners in a cupcake pan and fill each liner with 3 oz. batter (an ice cream scoop works well).

Step 4
Bake at 350 degrees F for 15 to 20 minutes. Make any flavor butter cream icing and top cupcakes once cooled.
