How to Make a Spicy Open-Faced E.A.T Sandwich

Wake-up to a lovely filling, but not overwhelming brunch on the weekend. This spicy, sharp, and succulent meal is perfect to get you going without making you feel like you've got to go. This recipe if for two open-faced E.A.T.'s (Egg Avocado & Tomato).

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1 Medium Hass Avocado
  • 2 Thick Slices of Sourdough Bread
  • 2 Extra Large Eggs
  • 1/2 Cup Shredded Monterey Jack Cheese
  • 1 Large Roma Tomato Sliced Thinly
  • 1 Teaspoon Cayenne Chili Powder
  • 1/4 Cup Melted Butter
  • Pastry Brush is Recommended
  1. Step 1

    Gather all of your ingredients into your workspace. Make sure that the cheese is shredded, the avocado is cut in half, and sliced into pieces. Also be certain to slice the tomato thinly since it will be put underneath melting cheese, and must heat quickly. Lastly make sure the butter is melted, and ready to use.

  2. Step 2

    Mix chili powder with butter, and heat and stir to mix flavors. Allow to set while frying the eggs.

  3. Step 3

    Fry the eggs to your desired doness, or scramble them if you desire also. Once they are cooked, set aside with a cover to hold hot.

  4. Step 4

    Heat flat skillet, and brush sourdough bread slices with chilibutter. Grill them on the flat skillet, and flip over once the first side is toasted.

  5. Step 5

    While the second side is grilling add tomatoes, then cheese. After that add the egg on top. Cover the pan for just a moment or two to promote even heating.

  6. Step 6

    Once they are hot, and ready to take from the heat, place them on the plates to serve, and fan out the avocado slices on top of them to garnish, and present.
