Here is a twist on a classic morning favorite! Poached eggs with a slightly smoky cheese, and oven toasted bread. Dill, and Pepper top this off to tickle the taste buds in the early AM.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • Eggs
  • Bread
  • Muenster Cheese
  • Butter
  • Dill
  • Pepper
  • Salt
  • Poaching cup or a good ladle
Step1
Prepare workstation by laying out ingredients, and getting tools & utensils prepared. Fill Poaching pan with enough water to reach the top of the poaching cup, or approximately one quart of water.
Step2
Heat the water with the poaching cup inside until it has reached proper temperature. (See the note on the bottom for a description of poaching temperature.)
Step3
Before you drop the egg into the water, it's time to toast the bread. You'll start by toasting your favorite bread in the toaster until it's as dark, or as light as you prefer (make it a little bit lighter if you will use a broiler to melt the cheese). Your egg should be dropped into the water, or cup when you put the toast into the oven so that the finish times are closer together. This is also where you should preheat the broiler if it's going to be used.
Step4
Crack an egg in side the poaching cup (or water if one is not used), and begin poaching. Allow the egg to cook for about 3-4 minutes. White vinegar helps hold it together too. (Don't use more then a tablespoon if it's a larger sauce pan, and half if it's smaller. After it has cooked, take it out gently. Work the edges easily with a cup, and use a slotted spoon if it is cooked directly in the water.
Step5
Now that your egg is ready, and your bread is toasted slap a slice of butter on that bread, sprinkle the dill, black pepper, and a little bit of salt just underneath the muenster on the bread, sling it in the broiler or microwave. When the cheese is bubbly take it out. In the broiler take it out, watch out for burnt edges too; extra cheese works wonders for that!

Tips & Warnings

  • Allow just a small amount of water no more than 2 teaspoons into the poaching cup, and then crack an egg inside, this will allow the egg to be cooked in the water.
  • Proper poaching temperature is 160-180 F, that means that you can see bubbles under the surface but they are not breaking the surface of the hot water
  • Be careful not to cook in boiling water. This will make the egg tough!
