How to make Kays Rice Pie

Rice Pie is a special old dessert recipe that my mother passed on to me. It's quite easy to make and delicious for parties and light dinner desserts.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • FOR THE PASTRY
  • 6 cups flour
  • 2 eggs
  • 1/2 cup warm water
  • 1/2 cup olive oil
  • 4 teaspoons vinegar
  • 1 teaspoon salt
  • FOR THE FILLING
  • 3 cups long grain rice
  • 1 cup sugar
  • 1 teaspoon cinammon
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • FOR THE SYRUP
  • 3 1/2 cups sugar
  • 2 1/2 cups water
  • 1 cinammon stick
  • 1 lemon wedge

Step1
PASTRY:
We work with our hands the liquid ingredients for the pastry and then we add the flour slowly, still working the mixture until it becomes like dough in our hands. We leave it until we make the rice. We open thin layers with a rolling pin (it should be 7 or 8 layers)
Step2
RICE FILLING:
We boil the rice in lots of water until it becomes almost transparent and it would melt easily. We place it in a bowl and add the other ingredients and stir softly until it's all mixed nicely.
Step3
SYRUP:
Add the sugar, the cinammon stick and the lemon wedge to the water and boil for 5 minutes. Add a teaspoon of lemon juice and keep boiling for 2 more minutes. Take it off but don't let it cool down
Step4
ADD EVERYTHING UP:
We have opened our layers in circles and now we fill each one with the rice mixture. With a spoon we make a trail across the pastry and roll it up. We put it in a pan and bake at 200oC for 40 minutes. When it's ready we take it out and pour the sirup over it. We let it cool down before serving.

Tips & Warnings

  • If you can find, you can use ready made pastry for pies
