Oh if I only had smellovision for this delicious banana bread. Here is a great vegan recipe for banana bread. You may substitute vegan ingredients with dairy stuff if you like.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/2 Cup Margarine (or butter)
  • 1 Cup Sugar
  • 1 Cup Whole Wheat Flour
  • 1 Cup Self Rising Unbleached Flour (aluminum free is best!)
  • 1 Teaspoon of Baking Powder
  • 5 Mashed old bananas (the older the better)
  • 1 Tablespoon Vanilla Extract
  • 1 Tablespoon Cinamon
  • 5 Tablespoons of Soy Milk
  1. Step 1

Preheat oven to 350F. Grease a glass or ceramic baking dish.

  2. Step 2

    Cream together margarine and Sugar.

  3. Step 3

Pour in the remaining ingredients and mix with a fork.

  4. Step 4

Pour ingredients into baking dish and put in the oven for about 1 hour. You will have to prick the middle of the bread to see if it needs more time (it should not be wet and gooey). Not all ovens are calibrated the same.

  5. Step 5

Remove from the oven when pricked ready and let sit for at least 30 minutes before removing from the pan and serving

Tips & Warnings
  • When using margarine, it is important to buy ONLY completely UNHYDROGENATED oil. There are many healthy brands on the market now. If your grocery store doesn't carry one of these brands, go to your healthfood store. Transfat free doesn NOT mean that there is no hydrogenated oils, you have to read the label carefully.
