Cucumbers are one of nature's most convenient foods. They are nutritious, refreshingly delicious, and readily available all year around. They are inexpensive and can be conveniently eaten as a snack or in many easy-to-prepare dishes. If you have your own garden space, they are very easy to grow.

Difficulty: Moderately Easy
Instructions
  1. Step 1

Slice a cucumber in thin slices and cover the slices in a marinade of apple cider vinegar, salt, freshly ground pepper. You can also add a thinly sliced onion or sliced green pepper to the marinade, along with some garlic powder or celery salt. Add a small amount of sugar if the marinade is too tangy for your taste.

  2. Step 2

Chop a cucumber into tiny cubes and use it to top a taco along with shredded lettuce and chopped tomato. Cucumber adds a refreshing flavor and extra nutrition to the taco.

  3. Step 3

Peel a cucumber and eat it raw for a quick and easy snack. Add a small amount of salt or pepper if you want.

  4. Step 4

Slice some peeled cucumbers into a bowl with some tomato slices, some apple cider vinegar and a dash of salt and pepper. Put the ingredients in a sealed container or a jar with a tightly-fitting lid and shake it well to blend the flavors. This tomato-cucumber salad is perfect on a hot summer evening.

  5. Step 5

Make an easy cucumber and sour cream salad by slicing a peeled cucumber into a mixture of sour cream with a small amount of milk and about a tablespoon of vinegar. Mix the ingredients together, sprinkle dill weed over the top and serve.
