How to Eat a Coconut

Coconut, one of nature's most nutritious foods, has been highly valued by people of the Pacific Islands and Asia for centuries. Although it's high in saturated fat, it's also vitamin rich, full of amino acids, protein, magnesium, potassium and fiber, and is every bit as delicious as it is healthy.

Instructions
  1. Step 1

    Enjoy an easy coconut smoothie. Mix 1/2 cup of coconut meat and 1 cup of coconut juice with 1/2 cup of ice cream and 1/2 of a banana and 1/2 cup of ice. Put it in a blender and blend until smooth, or if you prefer, until only small chunks of coconut are left. Add some fresh or canned pineapple for a tropical slushie.

  2. Step 2

    Make some coconut yogurt for a delicious and healthy breakfast or filling snack. Simply place the meat of one coconut with a bit of coconut juice and a teaspoon of lemon juice in a food processor or blender and mix until smooth. Serve the coconut yogurt on fresh papaya, kiwi, or any fresh fruit. Sprinkle the yogurt with a few chopped walnuts for added flavor and protein.

  3. Step 3

    Mix a cup of milk and 1 1/2 cups of heavy cream in a food processor or blender container to make fresh, homemade coconut ice cream. Add a can of cream of coconut and blend the mixture until it's creamy. Put the mixture in an ice-cream maker and proceed according to the manufacturer's directions. Garnish the ice cream with some shredded coconut.

  4. Step 4

    Try coconut in many delicious recipes, including salads, soups, breads and casseroles.
