Instructions
  1. Step 1

    Hold a scallop in one hand with its hinge away from you and insert a knife between the top and bottom shells to open the scallop completely. Remove the top shell and discard the slimy insides of the shellfish. Take out the scallop muscle to use in your favorite recipe.

  2. Step 2

    Place a shrimp in one hand and use your other hand to pull off its legs. Peel the shell off and pinch the tail to break it loose. Pull the tail off and slice along the back of the shrimp to expose its vein. Use a knife to lift the vein out and discard it.

  3. Step 3

    Rinse an oyster in water and cut into it at its hinge. Cut around its shell to separate its membrane and remove the top shell. Scrape out the oyster and rinse away any leftover shell particles before you enjoy this shellfish.

  4. Step 4

    Take off the large claws of a crab and lift off its top shell. Cut off the crab's face and remove its innards. Remove the remaining legs with a knife and scrape out the meat from the chambers that are separated by cartilage in the main body. Dig out the meat from the large pincers of this shellfish as well.

Tips & Warnings
  • Place your fresh scallops on ice to help open the shells.
  • Instead of taking out the scallop muscle, you can leave the muscle attached to its shell and broil it that way.
