Things You'll Need:
- 1 1/2 sticks unsalted butter, softened, not melted
- 3/4 fresh lemon juice
- 1 1/2 cups flour, sifted
- 1/3 cup sugar
- 4 large eggs
- 5 tbsp. flour
- 2 cups sugar
- Confectioners sugar
- 1/2 cup fresh blueberries
- 1 tube red gel icing

Step 1
Heat the oven to 350 degrees F. Combine the butter, 1 1/2 cups flour and 1/3 cup sugar. Press into a 13 by 9 baking pan. Bake for 20 minutes until the edges are just turning golden brown. Remove from the oven.

Lightly whisk the eggs while the crust is baking. Sift the flour and sugar together and add to the eggs. Add the lemon juice and stir well. Pour the mixture over the hot crust.

Return the baking pan to the oven for an additional 20 minutes. Bake until the topping is firm. Chill thoroughly to allow the topping to set before cutting.

Cut the bars into 6 equal rectangles, each 4 1/2 by 3 1/4 inches. Make one cut the length of the pan. Cut across the width at the mid-line, then divide each half in half again.

Place a lemon bar on a plate and dust liberally with confectioner's sugar using a small strainer. Draw the red "stripes" of the flag across the width of the lemon bar with the red gel icing.

Rinse and dry the whole blueberries on a paper towel. Place six blueberries in the corner of each flag to represent the field of stars.

Move each completed Lemon Bar Flag to a large serving platter or individual dessert plate. Keep in a cool place until time to serve.
