How to Make Blueberry Salmon

Blueberries and salmon may seem like an odd combination, especially when you top them with lime, grapefruit, pineapple and chili peppers, but the succulent flavor is one you won't soon forget. This easy gourmet dish is a favorite in the Pacific Northwest, and after you try it, you'll understand why. This recipe serves two.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 1 cup fresh blueberries
  • 2 salmon fillets (6 to 8 oz. each)
  • ½ ruby red grapefruit (cut into bite-size pieces)
  • 2 fresh limes
  • ½ cup crushed pineapple
  • ½ tsp. chili powder
  • Freshly ground black pepper
  • 1 Anaheim chili pepper, thinly sliced
  • 2 tbsp. butter
  • ¾ cup firmly packed brown sugar
  • Glass casserole or baking dish
Step1
Preheat the oven to 425 degrees Fahrenheit.
Step2
Butter a glass casserole or baking dish thoroughly and spread the pineapple in the bottom of the dish. Grind a generous amount of fresh black pepper over the pineapple.
Step3
Put the sliced chili peppers on top of the pineapple and squeeze the lime juice over the chili peppers.
Step4
Arrange the salmon fillets over the top of the ingredients already in the dish, and layer the grapefruit chunks over the salmon fillets.
Step5
Top the grapefruit chunks with the blueberries, and sprinkle brown sugar over the grapefruit.
Step6
Season the dish with a generous sprinkling of chili powder.
Step7
Bake the blueberry salmon for approximately 30 minutes, or until the salmon is opaque and the top is hot and bubbling. Serve the blueberry salmon with freshly steamed vegetables and rice.

Tips & Warnings

  • Blueberry salmon is especially delicious served with fresh asparagus spears. Artichokes are also a good choice.
