How to Make Blueberry Vinaigrette

Vinaigrette is one of many delightful uses for sweet and tangy blueberries. Blueberry vinaigrette has a piquant flavor and is especially delicious on spring greens, grilled chicken, and even grilled or roasted asparagus. Make a blueberry vinaigrette to add a lovely purple splash of color to any dish.

Instructions

Things You'll Need:

  • 1¼ cup fresh blueberries, rinsed
  • 3 tbsp. balsamic vinegar
  • ½ tsp. salt
  • 1/8 tsp. black pepper, freshly ground
  • ¼ cup extra virgin olive oil

    Tangy Blueberry Vinaigrette

  1. Step 1

    Sauté the shallots and garlic in the olive oil, and allow to cool for a few minutes.

  2. Step 2

    Mix in all of the remaining ingredients except the blueberries. When the mixture is smooth, add the blueberries.

  3. Step 3

    Place the mixture in a blender or food processor and pulse it several times, just until the blueberries are blended.

  4. Step 4

    Chill and serve.

  6. Step 1

    Place the blueberries, balsamic vinegar, salt and pepper in a blender container.

  7. Step 2

    Blend until the mixture is creamy and smooth.

  8. Step 3

    Add the oil and continue to blend until thoroughly mixed.

  9. Step 4

    Use immediately.

Tips & Warnings
  • Stir in 1 tbsp. plain yogurt or mayonnaise for a creamy dressing.
  • Sprinkle some blue cheese and bacon on lettuce or greens and top it with the blueberry vinaigrette for an easy and impressive salad.
