Things You'll Need:
- 10 oz. blueberry jelly or jam
- ½ cup chocolate chips
- ¼ cup soy milk
- ½ cup safflower or canola oil
- ¾ cup sugar
- ½ tsp. almond extract
- 2 tsp. vanilla extract
- 1½ cup flour
- ¼ cup cocoa powder, unsweetened
- ½ tsp. baking soda
- ¼ tsp. baking powder
- ¼ tsp. salt
- 1 cup fresh blueberries
- 1/3 cup chopped walnuts

Step 1
Preheat the oven to 325 degrees.

Oil a 9-by-13-inch baking pan.

Place 2/3 cup of the chocolate chips in a double boiler and melt them over low heat. They can also be melted in a microwave.

Combine the blueberry jam or jelly, soy milk, oil, sugar, almond extract and vanilla in a large mixing bowl and mix on high for about 2 or 3 minutes, or until all large clumps are gone.

Sift the flour together with the cocoa powder, baking soda, baking powder and salt, and stir until the mixture is thick and well blended.

Combine the melted chocolate with the dry ingredients and fold in the fresh blueberries, walnuts, and the remaining chocolate chips. Spread the batter into the oiled pan.

Bake the vegan blueberry brownies for 45 minutes. Allow them to cool completely before serving. The brownies will be sticky.
