How to Make Vegan Blueberry Brownies

Vegan blueberry brownies are so amazingly fudgy and delicious that nobody will guess that they include absolutely no dairy products. If you have a bounty of blueberries and you are not sure what to do with them, try your hand at some baking, vegan style.

Things You'll Need:

  • 10 oz. blueberry jelly or jam
  • ½ cup chocolate chips
  • ¼ cup soy milk
  • ½ cup safflower or canola oil
  • ¾ cup sugar
  • ½ tsp. almond extract
  • 2 tsp. vanilla extract
  • 1½ cup flour
  • ¼ cup cocoa powder, unsweetened
  • ½ tsp. baking soda
  • ¼ tsp. baking powder
  • ¼ tsp. salt
  • 1 cup fresh blueberries
  • 1/3 cup chopped walnuts
  1. Step 1

    Preheat the oven to 325 degrees.

  2. Step 2

    Oil a 9-by-13-inch baking pan.

  3. Step 3

    Place 2/3 cup of the chocolate chips in a double boiler and melt them over low heat. They can also be melted in a microwave.

  4. Step 4

    Combine the blueberry jam or jelly, soy milk, oil, sugar, almond extract and vanilla in a large mixing bowl and mix on high for about 2 or 3 minutes, or until all large clumps are gone.

  5. Step 5

    Sift the flour together with the cocoa powder, baking soda, baking powder and salt, and stir until the mixture is thick and well blended.

  6. Step 6

    Combine the melted chocolate with the dry ingredients and fold in the fresh blueberries, walnuts, and the remaining chocolate chips. Spread the batter into the oiled pan.

  7. Step 7

    Bake the vegan blueberry brownies for 45 minutes. Allow them to cool completely before serving. The brownies will be sticky.
