How to Make Blueberry Coffee Cake

Blueberry coffee cake is a delicious way to use freshly picked blueberries. It's great anytime, but is especially delicious for an easy breakfast snack served with steaming hot coffee. Read on to learn how to make blueberry coffee cake with a crunchy-sweet streusel topping.

Things You'll Need:

  • 2 cups flour
  • ½ tsp. salt
  • 2 tsp. baking powder
  • 1 cup sugar
  • ½ cup butter
  • 1 large egg
  • 1 tsp. vanilla
  • 1 cup fresh blueberries
  • ¼ cup powdered sugar

    Streusel Topping

  1. Step 1

    Mix the brown sugar, flour and cinnamon in a medium-sized mixing bowl.

  2. Step 2

    Cut in the butter until the mixture is crumbly.

  3. Step 3

    Set the streusel topping aside.

  4. Coffee Cake

  5. Step 1

    Preheat the oven to 350 degrees.

  6. Step 2

    Oil a bundt pan, or coat it with non-stick cooking spray.

  7. Step 3

    Beat the butter in a large mixing bowl until creamy. Add the sugar and continue mixing until it turns fluffy. Mix in the large egg and vanilla.

  8. Step 4

    Whisk the flour with salt and baking powder in a separate bowl.

  9. Step 5

    Beat a small amount of flour mixture into the butter mixture, followed by a small amount of milk. Continue to alternate flour and milk, beating well.

  10. Step 6

    Spread about half of the butter in the oiled bundt pan, and spread the blueberries over the batter. Spoon the remaining batter over the blueberries and sprinkle the streusel topping over the batter.

  11. Step 7

    Bake the blueberry coffee cake for about an hour, or until it turns golden brown. Cool it on a wire rack, and then invert it on a plate. Dust it with powdered sugar.
