How to Make Sugar-Free Truffles
You may be on a sugar-free diet, but that doesn't mean you have to give up all of the finer things in life. Sugar-free truffles are creamy and delicious, and they're suitable for diabetics, or anybody who is eliminating sugar or cutting carbohydrates. Make sugar-free truffles to enjoy a decadent guilt-free dessert. Does this Spark an idea?
Things You'll Need
- 8 oz. finely chopped unsweetened chocolate
- 2/3 stick butter, diced into small chunks
- ¼ cup coffee
- 1 vanilla bean, seeded and split
- 2 slightly beaten egg yolks
- 2 cups artificial sweetener
- ¼ cup powdered cocoa, unsweetened

Place the unsweetened chocolate, butter, coffee, vanilla bean and beaten egg yolks in a microwave safe baking dish.

Mix the ingredients slightly to moisten the chocolate, and microwave the mixture on 50 percent power for three minutes. Add a few more seconds if the chocolate needs more time to melt.

Stir in 1 cup of the artificial sweetener and mix it well.

Remove the vanilla bean and spread the mixture evenly into a small pan lined with parchment or waxed paper. Place the pan in the refrigerator until it firms up slightly.

Combine the cocoa powder and the second cup of sweetener in a small bowl. This will be the dusting powder for the truffles.

Cut the truffle into small pieces and then roll them into balls with your hands. Roll the truffles one by one in the dusting powder.

Store the sugar-free truffles in the refrigerator, and serve them at room temperature.

Substitute water for the ¼ cup of coffee if you prefer truffles without coffee flavor.
