How to Make Sugar-Free Truffles

You may be on a sugar-free diet, but that doesn't mean you have to give up all of the finer things in life. Sugar-free truffles are creamy and delicious, and they're suitable for diabetics, or anybody who is eliminating sugar or cutting carbohydrates. Make sugar-free truffles to enjoy a decadent guilt-free dessert.

Instructions

Things You'll Need:

  • 8 oz. finely chopped unsweetened chocolate
  • 2/3 stick butter, diced into small chunks
  • ¼ cup coffee
  • 1 vanilla bean, seeded and split
  • 2 slightly beaten egg yolks
  • 2 cups artificial sweetener
  • ¼ cup powdered cocoa, unsweetened
  1. Step 1

    Place the unsweetened chocolate, butter, coffee, vanilla bean and beaten egg yolks in a microwave safe baking dish.

  2. Step 2

    Mix the ingredients slightly to moisten the chocolate, and microwave the mixture on 50 percent power for three minutes. Add a few more seconds if the chocolate needs more time to melt.

  3. Step 3

    Stir in 1 cup of the artificial sweetener and mix it well.

  4. Step 4

    Remove the vanilla bean and spread the mixture evenly into a small pan lined with parchment or waxed paper. Place the pan in the refrigerator until it firms up slightly.

  5. Step 5

    Combine the cocoa powder and the second cup of sweetener in a small bowl. This will be the dusting powder for the truffles.

  6. Step 6

    Cut the truffle into small pieces and then roll them into balls with your hands. Roll the truffles one by one in the dusting powder.

  7. Step 7

    Store the sugar-free truffles in the refrigerator, and serve them at room temperature.

Tips & Warnings
  • Substitute water for the ΒΌ cup of coffee if you prefer truffles without coffee flavor.
