Step 1
Summon the dim sum trolley, and if the dim sum is under covered dishes or bamboo baskets, ask what type of dim sum is in them. Usually, the wait person won't mind if you lift the lid and take a look.

Politely sample a variety of dim sum, and avoid ordering too much at once. It may be more filling than you expect.

Lift the lid of your teapot to signal a request that the teapot be filled with fresh hot water. Balance the lid on the side of the pot or let it hang by the cord or wire that binds it to the pot.

Leave the empty dim sum plates and baskets near your area of the table so the wait person can calculate your bill when you are finished. Some dim sum restaurants may provide you with a small card that the waitperson will stamp each time you choose a plate or basket of dim sum.

Lay your chopsticks across your plate or bowl to signify to the waitperson that you are finished eating. If the waitperson is so busy that she misses the sign, politely catch her attention.
