Want a wonderful dish to serve at your next brunch? How about a breakfast you can make in advance for an extra special family breakfast? Then this breakfast quiche is the answer for you.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 3 c. frozen hashbrowns (thawed)
  • 1/3 c. butter (melted)
  • 1 c. cooked ham (diced)
  • 1 c. (4 oz.) shredded cheddar cheese
  • 1/4 c. green pepper (optional)
  • 2 eggs
  • 1/2 c. milk
  • salt and pepper to taste

Step1
Press hashbrowns between towel to remove excess moisture.
Step2
Press hashbrowns into bottom and sides of ungreased 9" pie pan and drizzle with melted butter. Bake at 425 for 25 minutes.
Step3
Spoon ham, cheese, and green pepper over hashbrowns. Mix eggs, milk, and salt and pepper and pour over it all. Bake 25-30 minutes at 350.
Step4
Remove from oven and let stand for 10 minutes.

Tips & Warnings

  • You can also add onions with ham, cheese, and green pepper
  • I have also tried this with sasage or bacon (cook first). Mix and match your favorite meats
  • You can double the recipe too, however when cooking the second time it may take a little longer. And be sure to use a bigger pan =)
  • Casserole dishes work instead of pie pans
