How to Make Lasagna Noodles

If you love homemade lasagna, wait until you taste it with noodles made from scratch. It’s not nearly as difficult or time-consuming as you may think. Besides, it’s well worth the extra effort to make your homemade lasagna as homemade as possible.

Instructions

Things You'll Need:

  • 4 cups semolina flour
  • 1 tsp. salt
  • 1 tsp. basil
  • ½ tsp. oregano
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • 1 ½ cups warm water
  1. Step 1

    Mix flour, salt, basil, oregano, onion powder and garlic powder in large bowl.

  2. Step 2

    Add warm water to flour mixture. Stir with wooden spoon. Use your hands to finish mixing it evenly.

  3. Step 3

    On floured surface, knead the dough for 10 minutes.

  4. Step 4

    Form the dough into two even balls. Cover and leave to stand for 15 minutes.

  5. Step 5

    Divide each ball into quarters, giving you eight relatively even pieces of dough.

  6. Step 6

    Take one of your dough pieces and roll out to 1/8 to 1/16 inch thick. Be sure to keep the rest of the dough covered so that it stays moist. Use a knife to cut the rolled-out dough into a strip 3 inches wide by 6 inches long.

  7. Step 7

    Repeat Step 6 for the other seven pieces of the lasagna noodles dough.

  8. Step 8

    Fill a large pot with water. Sprinkle with salt. Bring to boil and add the lasagna noodles one at a time.

  9. Step 9

    Cook for five minutes or until desired tenderness. Remember, the noodles will continue to cook inside the lasagna. Use a wooden spoon to gently move noodles around in the pan, making sure none stick to the bottom or sides, or to each other.

  10. Step 10

    Drain noodles and layer into your favorite lasagna recipe.

Tips & Warnings
  • The basil, oregano, onion powder and garlic powder are optional. You may substitute your favorite herb seasoning blend or make your lasagna noodles without spices at all.
  • You may use this same recipe to make pasta of all shapes and sizes. Simply adjust the spices to suit the type of dish you’re making.
