How to Smooth Icing on Wedding Cakes

Wedding cakes covered in knife lines or bumpy icing ridges look unprofessional and rushed. While the initial layer of icing is important to seal in crumbs, the last layer is the one all the guests see. With a hot spatula and a little patience, a smooth layer of icing is easy to achieve at home or in the bakery.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Spinning cake table
  • Icing
  • Spatula
  • Hot water

Step1
Use a spinning cake table for the best results when smoothing the final layer of icing. If you don't have a spinning cake table, always hold the spatula at a 45-degree angle for the smoothest application.
Step2
Begin smoothing the final layer of icing on the sides of the cake. Holding the spatula, spin the cake table, slowly, without lifting the spatula from the sides of the cake. This may form a ridge around the top edge of the cake, but you can smooth that out when you finish the top.
Step3
Fill a container, large enough for the spatula to slide into, with hot water. Place it next to you before you start smoothing the top of the wedding cake.
Step4
Dip the spatula into the hot water and gently wipe it dry. Starting at the edge farthest from you, use the hot spatula and spread the icing in toward the center of the wedding cake.
Step5
Rinse the spatula off after each swipe to remove excess icing. Continue smoothing the top of the wedding cake, by working your way around the edge of the cake and pulling the icing in towards the center.
