Add either grated Parmesan and/or grated Romano cheese to the heavy cream and butter bubbling in the sauce pan. Use a fork to break up the cheese and distribute it evenly into the sauce. The cheese is the main thickening agent in this sauce.

Mix the cheese slowly into the sauce as it melts in the hot cream and butter mixture. As the sauce begins to thicken, use a whisk to break up any remaining clumps of cheese.
