Instructions

    • 1

Clean your game hen by removing any organs that have not been taken out already. Run it under cold water, especially in the cavity, to remove any excess particles.

    • 2

Ensure you have at least 24 hours to marinade the hens prior to cooking.

    • 3

Clear out enough space in your refrigerator to accommodate the number of game hens you are preparing.

    • 4

Choose the type of marinade you are going to use on your Cornish game hen. You can use any kind of theme from classic herbs and spices to a favorite cuisine such as Asian or Latin.

    • 5

Use a good acidic ingredient such as lemon or lime juice to help the marinade soak into the game hen's flesh. Use white wine, balsamic or rice wine vinegar for different and often more pungent flavors. Use them according to the flavor combinations you are looking to utilize.

    • 6

Mix all the ingredients (minus the game hens) in a small bowl or saucepan. If you are using aromatic vegetables, bring the entire mixture to a boil then refrigerate to cool prior to placing on the hens.

    • 7

Place the hens into a plastic, zippered bag or bags, depending on the number of hens you are marinating.

    • 8

Pour the mixture over the hens, making sure to get it in the cavity. Marinade Cornish game hens in the refrigerator, turning occasionally to redistribute the liquid.

Tips & Warnings

  • The best marinades are the ones you can leave on for 48 hours before cooking. You can either buy the marinades pre-made or make them yourself from your favorite recipe.
