Brown rice is a staple for macrobiotic diets. One of the quickest ways the rice is to use a pressure cooker, a method that also locks in nutrients. Sea salt and kombu can be added to the rice to add flavor and minerals.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Brown rice
  • Water
  • Sea salt
  • Kombu
  • Pressure cooker
  • Flame tamer
Step1
Measure 1 cup of dry, brown rice. Do not use instant brown rice, which has been stripped of its nutrients.
Step2
Place 1 1/4 cups water into the pressure cooker.
Step3
Add the dry, brown rice to the water in the pressure cooker. Stir the rice with a wooden spoon or rice paddle.
Step4
Add a pinch of sea salt or several kombu leaves to the rice. Kombu is a dried seaweed that can be found in health food stores or Japanese food stores. Kombu adds minerals and B vitamins to the diet.
Step5
Lock the pressure lid on the pot, and set the pressure to number two. Cook on low flame for 20 minutes.
Step6
Place a flame tamer under the pressure pot. Turn the heat up to activate the pressure cooker. Cook for fifteen minutes under pressure. Remove the pressure cooker from the heat.
Step7
Open the pressure cooker after the pressure has subsided. Enjoy the healthy brown rice.

Tips & Warnings

  • Consult a macrobiotic cookbook for various recipes that use brown rice.
  • When doubling the recipe, increase the cooking time.
  • Check to make sure the lid is locked before turning on the heat.
