How to Make Beef Dim Sum

Things You'll Need:

  • ½ lb. beef, cut into small pieces
  • ½ tsp. grated tangerine peel, soaked in warm water and minced
  • ½ tsp. fresh ginger, minced
  • 4 water chestnuts, diced
  • 1 green onion, chopped finely
  • 1 tbsp. soy sauce
  • ¼ tsp. pepper
  • 1 tsp. sugar
  • 1 tbsp. canola or safflower oil
  • 1 tsp. corn starch
  • 1 tbsp. sherry
  • ½ cup water
  • Parsley

    Pastry

  1. Step 1

    Sift the flour and salt together in a mixing bowl.

  2. Step 2

    Stir in the boiling water and mix until the dry ingredients are blended in.

  3. Step 3

    Cover the mixture and let it rest for 1 minute.

  4. Step 4

    Add the lard and knead the mixture into a soft dough.

  5. Beef Filling

  6. Step 1

    Put the chopped beef, water chestnuts, tangerine peel, onion and ginger in a food processor, set it on mince, and blend it into a puree.

  7. Step 2

    Place the soy sauce, pepper, sugar, oil, corn starch, sherry and water into a bowl and stir the mixture until the dry ingredients are completely dissolved.

  8. Step 3

    Pour the soy sauce mixture slowly into the beef mixture, and process until it's smooth.

  9. Step 4

    Allow the mixture to marinate for about 30 minutes.

  10. Make the Dim Sum

  11. Step 1

    Place the dough on a lightly floured surface and roll it into a long, thin shape.
    Use a table knife to divide the dough into 32 equal sections.

  12. Step 2

    Roll each section into a small circle, and place 1 tbsp. of the filling on each one.

  13. Step 3

    Bring the edges of the circle up and around the filling, so it looks somewhat basket shaped.

  14. Step 4

    Press the tops of the dim sum with a table knife to flatten, and sprinkle on a bit of parsley for garnish.

  15. Step 5

    Put the beef dim sum into an oiled steamer and steam on high heat briefly, about 5 minutes.
