How to Make Vegan Dim Sum

Chinese Dim Sum lends itself to a vegan diet. Although dim sum can be made of meat, vegetable and spice combinations, you won't even notice the absence of meat in this vegan dim sum.

Things You'll Need:

  • 1 ½ cups vital wheat gluten flour
  • ¼ cup flaked brewer's yeast
  • 11 cups of cold vegetable broth or water
  • 1 tbsp. tomato paste
  • 1 cup soy sauce
  • 2 grated garlic cloves
  • 1 tsp. lemon zest

    Vegetable and Spinach Dim Sum

  1. Step 1

    Place all of the ingredients, except the wonton wrappers, in a large bowl and stir to mix thoroughly.

  2. Step 2

    Spoon a small amount of the mixture into the center of the spinach wonton wrappers.

  3. Step 3

    Fold the four corners up to create a basket shape and seal.

  4. Step 4

    Steam the vegetable and spinach dim sum for 10 minutes.

  5. Step 5

    Serve two or three dim sum per plate.

  6. Vegan Seitan Dim Sum

  7. Step 1

    Mix the vital wheat gluten flour and the brewer's yeast in a large mixing bowl.

  8. Step 2

    Place 1 cup of cold vegetable broth or water in a separate bowl and add the tomato paste, ½ cup soy sauce, garlic and lemon zest.

  9. Step 3

    Pour the liquid ingredients into the dry ingredients and blend it into a dough with a hard spatula.

  10. Step 4

    Knead the dough until a spongy dough forms, about 3 minutes. Allow the dough to rest for about 2 minutes. Roll it into a cylindrical shape about 8 inches long and cut it into 3 equal pieces.

  11. Step 5

    Make a broth from the remaining 10 cups of vegetable broth or water and ½ cup soy sauce while the dough is rising. Simmer the broth in a saucepan. The liquid should be cold, so don't put it on the stove yet.

  12. Step 6

    Place the dough pieces in the broth and cover the saucepan loosely to allow steam to escape. Bring it to a boil, then lower the heat and simmer the mixture gently for 1 hour, turning the pieces occasionally.

  13. Step 7

    Allow the vegan seitan to cool in the simmering broth. It can now be served as is, or you can cut it into small pieces and fry in hot oil.
