How to Make Vegan Dim Sum

Chinese Dim Sum lends itself to a vegan diet. Although dim sum can be made of meat, vegetable and spice combinations, you won't even notice the absence of meat in this vegan dim sum. Does this Spark an idea?

Things You'll Need

  • 1 cup fresh spinach, cooked
  • 1 cup fresh broccoli, cooked
  • 1 cup fresh watercress or Shanghai cabbage, cooked
  • 2 tbsp. fresh ****ake mushrooms, diced
  • 2 tbsp. fresh tree ear mushrooms, finely chopped
  • ¾ cup cooked carrots, diced
  • ¾ cup vegetarian burger, crumbled
  • 4 tbsp. pickled vegetables
  • ¼ cup safflower or canola oil
  • 2 tbsp. sesame oil
  • 1 tsp. white pepper
  • 1 tsp. salt
  • 1 pkg. spinach wonton wrappers
  • 1 ½ cups vital wheat gluten flour
  • ¼ cup flaked brewer's yeast
  • 11 cups of cold vegetable broth or water
  • 1 tbsp. tomato paste
  • 1 cup soy sauce
  • 2 grated garlic cloves
  • 1 tsp. lemon zest

Instructions

  1. Vegetable and Spinach Dim Sum

    • 1

      Place all of the ingredients, except the wonton wrappers, in a large bowl and stir to mix thoroughly.

      Spoon a small amount of the mixture into the center of the spinach wonton wrappers.

      Fold the four corners up to create a basket shape and seal.

      Steam the vegetable and spinach dim sum for 10 minutes.

      Serve two or three dim sum per plate.

    Vegan Seitan Dim Sum

      Mix the vital wheat gluten flour and the brewer's yeast in a large mixing bowl.

      Place 1 cup of cold vegetable broth or water in a separate bowl and add the tomato paste, ½ cup soy sauce, garlic and lemon zest.

      Pour the liquid ingredients into the dry ingredients and blend it into a dough with a hard spatula.

      Knead the dough until a spongy dough forms, about 3 minutes. Allow the dough to rest for about 2 minutes. Roll it into a cylindrical shape about 8 inches long and cut it into 3 equal pieces.

      Make a broth from the remaining 10 cups of vegetable broth or water and ½ cup soy sauce while the dough is rising. Simmer the broth in a saucepan. The liquid should be cold, so don't put it on the stove yet.

      Place the dough pieces in the broth and cover the saucepan loosely to allow steam to escape. Bring it to a boil, then lower the heat and simmer the mixture gently for 1 hour, turning the pieces occasionally.

      Allow the vegan seitan to cool in the simmering broth. It can now be served as is, or you can cut it into small pieces and fry in hot oil.
