It's the Saturday before Easter; the days are getting long and warm. Spring fever is upon us as we get that itch to have the first BBQ of the season. Why not start the spring off with a bang and invite your 21-and-over crowd over for a welcome spring Easter party with a fun fetish new twist? Cooked wabbit!

Instructions

Difficulty: Moderate

Things You’ll Need:

  • Fresh, farmed rabbit from your local butcher.
  • A tangy or spicy BBQ sauce.
  • Other traditional foods to serve at your BBQ (slaw, corn bread, baked beans...).
  • A well stocked bar.
Step1
Set the date for your party and send out invitations at least a week in advance. 2-3 weeks would be better. You could find a nice Easter bunny invitation online. Be sure to include your party's date, time, address to the location, directions, and your phone number. Since this is an adult party, you might make an extra note letting guests know that this is a 21-and-over kind of thing.
Step2
Delicious. You would be surprised to find out how quickly rabbit sells out at your local butcher around the Easter holiday. Do yourself a favor and get a head start on the rabbit shopping and freeze it. Try to get fresh rabbit from the butcher, its better tasting then what you'll find in the freezer. Bunny is usually sold in pieces, if not have your butcher section the rabbit into serving size pieces. 1 or 2 pieces per person is about all I ever go through (course I always get a few meat and veggie burgers for the picky bunch).
Step3
2 days before the BBQ, get your bunny out of the freezer and put it in drip proof tray in the fridge for thawing.
Step4
The morning of, boil your bunny in a pot with enough water to cover for 1 hour (bring the pot of rabbit to boil then boil for 1-hour). Make it 1 and 1/2 hours to boil if you’re cooking a large amount. Set the pieces aside in the fridge. Set your bar up and print out a few Easter drink recipes (an "Easter bunny" has 1 1/2 ounces of dark crème de cocoa, 1/2 ounce of vodka, 1 teaspoon of chocolate syrup, and 1 teaspoon of cherry brandy shaken with ice and stained into a cocktail glass). Finish getting your other foods ready and all you have to do is get yourself prepared for your party.
Step5
Adults only! Once your guests arrive and have a cool beverage in hand. Fire up the BBQ and let her heat up. Set out your other dishes. Your rabbit can be brushed with sauce and thrown on just like chicken. Grill on both sides to heat through, it tastes good I swear and you always have back-up burgers and side dishes for those who might not be as adventurous. Enjoy!

Tips & Warnings

  • You can also do games like: Easter egg toss, with raw eggs of course or the Easter egg pass (the person holds the egg under his/her chin and the egg has to be passed to the next person without using any hands in a relay race).
  • Keep some chocolate bunnies or packages of Peeps on hand for the winners.
  • Spring weather is unpredictable, you might have an indoor party place in mind for a back up plan.
