How to Cook Semi-Mexican Chicken And Rice

With this recipe you will learn how to make a tasty Mexican dish the easy way!!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 4 boneless chicken breast
  • 1 jar of salsa cn queso
  • chives
  • pepperonici peppers
  • 2 lemon wedges
  • diced green peppers
  • diced tomatoes
  • original Mrs. Dash
  • lemon herb seasoning
  • long grain rice
  • paprika
  • salt
  • pepper
  • olive oil
  • pan
  • casserole dish

Step1
Start boiling rice and cook as direction say on the bag. Add salt and paprika while water is boiling to make water and rice red.
Step2
When the rice is close to being done season chicken with salt, pepper, chives, Mrs. Dash, and lemon herd seasoning. Sauté on both sides in olive oil until lightly brown. Lightly squeeze lemon juice on both sides.
Step3
While the chicken sauté chop up the pepperonici peppers (less or more according to how spicy you want it.) Mix diced tomatoes, green peppers, and pepperonici in a bowl and add pepper.
Step4
Once chicken is light brown on both sides and rice is cooked pour rice into casserole dish and place chicken on top.
Step5
Pour the salsa con queso over chicken and rice and add you mixture of tomatoes, pepperonici, and green peppers on top.
Step6
Bake for 45 minutes then let stand for 10 minutes. Serve and enjoy!

Tips & Warnings

  • You can substitute salsa con queso with salsa for a twist.
  • Substitute lemon with lime for another delicious twist.
  • Do Not Over Cook Or Thoroughly Cook chicken in pan. Continue to cook in oven!
