How to Bring an Alfredo Sauce to a Boil

Delicious on fettuccini, Alfredo sauce is rich with parmesan cheese, butter and cream. By combining the ingredients in a certain order, you can achieve a savory sauce that you'll be proud to serve your family.

Instructions

Things You'll Need:

  • Cooked fettuccini (or other pasta)
  • Favorite Alfredo sauce recipe
  • Hand whisk
  • Heavy saucepan or skillet
  1. Step 1

    Melt the amount of butter called for in your recipe, over medium heat, in a heavy saucepan with a good non-stick finish. Cast aluminum pans with enameled finishes work well.

  2. Step 2

    Stir constantly with the hand whisk as you add the heavy cream to the melted butter. Continue stirring as you bring the mixture to a boil over medium heat.

  3. Step 3

    Add the Parmesan cheese and any additional seasonings called for in your recipe. You may substitute Romano cheese for Parmesan or combine them.

  4. Step 4

    Bring the mixture back to a slow boil and turn down the heat, allowing it to simmer for an additional 3 to 5 minutes, until the surface of the mixture develops a slightly wrinkled texture. Stir frequently.

  5. Step 5

    Serve immediately over fettuccini or your choice of pasta. Sprinkle with additional Parmesan cheese, if desired.

Tips & Warnings
  • If your recipe calls for an egg yolk, add it right after the Parmesan cheese melts. Some chefs like to remove a few spoonfuls of the hot liquid and blend them in a small bowl with the yolk before adding the mixture to the hot liquid in the pan.
  • Always stir the hot mixture quickly with your whisk when adding the cheese to keep it from forming lumps.
