How to Prepare Cheesecake Flan

Things You'll Need
- ½ cup granulated sugar
- 3 tbsp. water
- 3 eggs
- 8 oz. softened cream cheese
- 1 tsp. vanilla extract
- 13 oz. evaporated milk
- 1 ¼ cup sweetened condensed milk
- Cheesecake or soufflé pan

Carmelize the sugar by heating it slowly in a small skillet or saucepan, stirring constantly. When the sugar is completely melted and is just beginning to smoke, slowly add the boiling water, stirring constantly. Continue stirring until the sugar is dissolved and turns a deep golden color. Don't let it get too dark, because it will continue to cook after you've removed it from the pan.

Spread the carmelized sugar in the bottom of a cheesecake or souffle pan.

Put the eggs and cream cheese in a blender and blend on medium speed until the mixture is smooth

Blend in the condensed milk and once the mixture is smooth, add the evaporated milk, continuing to blend.

Pour the mixture over the carmelized sugar and set the pan in another larger pan with about an inch of water.

Bake the cheesecake flan for 1 hour.

Cool the flan and slide it upside down on a plate. Chill until ready to serve.
